Several years ago, faculty member and PJ's Coffee franchise owner Aubry Miller opened an on-campus PJ's Coffee Shop which is fully managed by the students in her Financial Math Literacy Class. The coffee shop is a favorite of Rosary Campus students and faculty, who loved visiting the location adjacent to the ASH Cornerstore to enjoy their favorite coffee beverage and snack.
At the beginning of the 2020-2021 school year, Aubry and her class knew that COVID guidelines would change their operations. What better lesson for an entrepreneur to teach her class than how to quickly adapt to changing requirements! Putting their heads together, the class came up with various options to keep their business going with safety as a priority.
In addition to adjusting details of their main location near the Cornerstore, the class devised a second Grab and Go location on the second floor of the Rosary Campus near the entrance to the bridge. This new location offers contact-free pick-up and check-out, with an even more convenient location. The information of all students, faculty and staff are pre-loaded to facilitate an electronic check-out; they really thought of everything!
